Step 1: Whip Egg Yolks & Sugar
Insert butterfly whisk.
Add egg yolks and sugar to the mixing bowl.
Mix:

Mixture should become pale and creamy.
Step 2: Add Mascarpone
Add mascarpone and vanilla.
Mix:

Scrape down sides if needed. Do not overmix.
Step 3: Prepare the Coffee
In a shallow bowl, mix cooled coffee with optional sugar.
Quickly dip ladyfingers (do not soak).
Step 4: Assemble the Dessert
