- 180 g powdered sugar

1. Prepare the bowl
Make sure the mixing bowl is completely clean and dry. Any grease can prevent egg whites from whipping properly.
Insert the butterfly whisk attachment.
2. Whip the egg whites
Add the egg whites and salt.
Whisk:
3 min / 37Β°C / Speed 3.5
The egg whites should become foamy and start forming soft peaks.
3. Add sugar
Set the Thermomix to:
6 min / Speed 3.5
Slowly add the powdered sugar one spoon at a time through the lid opening while mixing.
Add vanilla and lemon juice during the last minute.
The mixture should become thick, glossy, and hold stiff peaks.
4. Shape the cookies
Transfer the meringue to a piping bag.
Pipe small swirls or kisses onto a baking tray lined with parchment paper.
If desired, add a drop of food coloring and swirl lightly for a marble effect.
5. Bake
Preheat oven to 100Β°C (210Β°F).
Bake for 1 hour 15 minutes β 1 hour 30 minutes until the meringues are dry and crisp.
Turn off the oven and let them cool inside the oven with the door slightly open for about 30 minutes.
